Perfection apricots are the only variety of apricots that we grow. They are a much larger and sweeter variety than most apricots. Although they are sweet, they have a very nice tart flavor near the skin as well. Perfection apricots are very soft and have a pit that is hardly connected to the fruit at all. They are very popular for canning and drying because of their ease to cut into perfect looking slices and widely popular for making into jams because of their tarter aftertaste.
